Pashalis Koutzimbis, Chef and founder of Zorbas, came to the United States in November of 1983 and decided to open the doors of his wonderful restaurant in March 1989. The restaurant started doing business with a Mexican food buffet and an a la carte menu of Greek food, even though the large part of their clientele were Mexican people. Six months after opening however, the Greek dishes were selling more and more, so Chef Koutzimbis decided to open a magnificent buffet of the best, most popular, and most typical Greek foods for all their clients to enjoy.
The name of the restaurant, "Zorbas" is inspired by the movie "Zorba the Greek." With that theme in mind, in 1995 the restaurant came up with the idea of offering an entertaining show to their guests, to educate them a bit about Greek music, traditions, dances, and most importantly, the taste of Greek food!
Mr. Koutzimbis puts his heart into each dish. For him, it's not a job, it's a passion! There is art embodied in the ingredients, whether it be oregano, mint, or garlic, and within each individual flavor mixture comes a succulent feast for those who are fortunate enough to taste his wonderful creations. Faithful customers have been visiting the restaurant for over 25 years to enjoy his incredible marinated lamb, moussaka, spanakopita, chicken souvlaki, not to mention delicious desserts like Baklava and Kantaifi, based with walnut and cinnamon ingredients which are also house favorites.
It should be noted that both clients and food critics point out that nobody has done a better or more accurate portrayal of authentic Greek cuisine as has Mr. Pashalis. Many say that they feel like they are sitting on the terrace of a restaurant located in the beautiful Greek islands, complete with a fabulous view, and a romantic feast served with a glass of Anis, (the most popular drink in Greece.)
